Then use liquid egg substitute so you don’t have to beat eggs. This recipe works with dairy or non-dairy milk, canned milk and reconstituted dry milk.    8 slices of cinnamon raisin bread1/3 cup sugar or equivalent2/3 cup liquid egg substitute1 ½ cups milk1/3 cup maple flavored pancake syrupSqueeze-on margarine or melted butter    Tear up bread and spread it in a sprayed, two-quart microware container. Sprinkle with sugar. Whisk together egg substitute, milk and syrup. Pour over bread. Let stand a few minutes while liquid soaks into the bread. Drizzle lightly with liquid margarine or melted butter. Microwave on Medium-High, turning every minute, until almost firm. Let stand until firm.      Serves 8-10. It’s good warm, chilled or at “room” temperature, alone or with a topping such as whipped topping or warm vanilla sauce.    Bread pudding can also be oven-baked in a buttered 9 X 13-inch pan at 325 degrees. When it’s almost set in the middle but at least 160 degrees, remove from the oven and let stand 10 minutes. Keep  portions small. You can always pass the pepper mill and hot sauce at the table.  Moist, tasty and spicy Cajun style 32-ounce carton chicken broth1 cup water1 stick butter1 tablespoon minced garlic½ teaspoon each Cajun seasoning and shrimp boilMedium onion, dicedSmall jar diced pimentos, drainedSmall green pepper, diced fine4 cups diced, cooked chicken1 to 1 ½ cups fine-diced smoked sausage2 cups long grain rice    Bring everything but the rice to a low boil in a large kettle and stir in rice. Cover, lower heat and cook 20-30 minutes or until rice is tender. Cool, stirring occasionally. Package for the freezer, allowing one to 1 ½ cups per serving. Thaw and heat. Bonus points for freezing this meal in boilable bags.

Shortcut Bread Pudding

FREEZE AHEAD RECIPE OF THE WEEK
Chicken & Rice Zydeco


    Green pepper and spicy sausages can overpower frozen meals. Keep  portions small. You can always pass the pepper mill and hot sauce at the table. 

 

Moist, tasty and spicy Cajun style

32-ounce carton chicken broth
1 cup water
1 stick butter
1 tablespoon minced garlic
½ teaspoon each Cajun seasoning and shrimp boil
Medium onion, diced
Small jar diced pimentos, drained
Small green pepper, diced fine
4 cups diced, cooked chicken
1 to 1 ½ cups fine-diced smoked sausage
2 cups long grain rice

    Bring everything but the rice to a low boil in a large kettle and stir in rice. Cover, lower heat and cook 20-30 minutes or until rice is tender. Cool, stirring occasionally. Package for the freezer, allowing one to 1 ½ cups per serving. Thaw and heat. Bonus points for freezing this meal in boilable bags.
